Kimchi '김치' is globally known as national food/dish of Korean people and has been staple of their food since ages specially of South Korea. It is a traditional fermented Korean delicacy which is made from vegetables mostly cabbage and range of spices/seasonings. But not just that, there were things that you might not know about kimchi.

Second. Kimchi is not a vegan. Tell all your vegetarian friends about kimchi being not a vegan food. Usually, its marinade is fish based mostly anchovies since fish gives off more flavor. However, the original stock for the marinade is beef (seogogi 쇠고기).
Third. It has full of vitamins. Kimchi is filled with Vitamins such as A, B1, B2 and C that are good to your body. Scientists have even found an enzyme in kimchi called lactobacillus kimchi. Thus, the consumption of kimchi can improved cardiovascular (referring to heart) health, digestive system and can prevent even diabetes.
Fourth. Kimchi was referred to "space kimchi". It was based on the fact that kimchi has been brought to space by astronauts to conduct a study on how the bacteria and enzymes in kimchi would react to cosmic radiations and would it remain safe for consumption. The discovery led to slow the fermentation process on kimchi to be tasted as fresh as would it be to be shipped worldwide.
Fifth. There are over 200 varities of kimchi. Mostly cabbage is well known for kimchi but, there are actually various kinds of kimchi. In fact, any vegetables can be made into kimchi considering that it will ferment and savor finely. Moreover, every season has its corresponding kimchi type. For instance, cucumber kimchi is perfect on hot, sizzling summer in which it is very juicy and hydrated.
Sixth. Indeed, it was the Korean goverment project that made kimchi known globally. The Korean government facilitated foreign governments and media to introduce kimchi to their people and to the world.
